To make this low calorie sticky toffee pudding you will need:

Dates – The dates contribute to most of the sweetness in this recipe which is great because they’re a natural sweetener. I used medjool dates but any variation should work for this recipe. The only thing that may differ between certain types of dates is the calories in them so keep that in mind.

Boiled water – A little boiled water is added to soften the dates and create a paste.

Baking soda – To help soften the dates and also in the cake to help it rise to perfection.

Self-raising flour – This recipe calls for self-raising flour as opposed to plain or all-purpose flour. This is because self-raising flour contains a combination of baking soda and baking powder for the perfectly soft and fluffy sponge. You can substitute for all-purpose flour plus, 1/4 tsp baking powder, 1/8 tsp salt and 1/8 tsp baking soda here.

Full-fat yogurt – There is very little fat in this recipe as there is no egg, oil or butter. Full-fat yogurt is fairly low in calories and will add moisture to the sponge. You can opt for low-fat or even 0% fat yogurt here but the texture may be a little dry. Only a small amount is required so there’s no need to substitute it here as the calorie difference will be very minimal. Use a vegan yogurt to make this recipe vegan and dairy-free.

0 calorie brown sugar Any 0 calorie sweetener will work for this recipe provided it is granulated. My personal favorite for this recipe is 0 calorie brown sugar as it mimics the taste of molasses which is used in traditional sticky toffee pudding recipes. A small amount will also be used to sweeten the sauce.

Unsweetened almond milk – Unsweetened almond milk is very low in calories and is perfect for baking with. You can opt for different milk if you don’t have any unsweetened almond milk but the calories will be different depending on the type of milk you use.

How to make low calorie sticky toffee pudding

  1. Pre-heat oven to 180°C (356°F).
  2. Place the dates in a small bowl and add the boiling water and baking soda. Mix well to coat the dates then mash to form a paste. Set aside.
  3. In a medium bowl, mix together the yogurt, 3/4 of the date paste, milk and 0 calorie brown sugar until well combined. Fold in the flour and baking soda and whisk to combine.
  4. Transfer the batter to a 9cm ramekin dish and bake for 15-20 minutes or until a toothpick inserted into the center comes out clean or with very few crumbs. Allow to cool in the ramekin for a few minutes.
  5. Make the sauce by mixing together the remaining date paste, yogurt and sweetener until well combined.
  6. Transfer the sponge to a dessert plate, top with the sauce and enjoy!

Ingredients

For the date paste:

  • 30 g medjool dates
  • ¼ tsp baking soda
  • 25 ml boiling water

For the sponge:

  • ¾ date paste
  • 30 g full-fat yogurt*
  • 15 ml unsweetened almond milk*
  • 20 g 0 calorie brown sugar*
  • 25 g self-raising flour*
  • ¼ tsp baking soda

For the caramel sauce:

Notes

*Yogurt – Full-fat yogurt is recommend for this recipe but low-fat and even 0% fat yogurt will work if that’s what you have to hand. Use vegan yogurt for a vegan version. 
*Milk – I recommend using unsweetened almond milk for this recipe as it has the lowest amount of calories. Any milk will work for this recipe but the calories may differ between milks. 
*Sweetener – 0 calorie brown sugar is my favorite for this recipe but any 0 calorie granulated sweetener will work. The ratio of the sweetener I used to regular sugar is 1:1 so keep that in mind if you use a different sweetener. 
*Flour – If you don’t have self-raising flour, you can use the same amount of all-purpose/plain flour and add 1/4 tsp baking powder, 1/8 tsp salt and 1/8 tsp baking soda.
